  A North Indian classic, Fresco Aloo Mutter Raseeley is a dish fit for royalty. Chunky potatoes and juicy green peas are cooked together with a few spices in light fluid tomato gravy. Dhaba Daal
  The low-fat and high-protein legume preparation is a standard at any north Indian roadside dhaba (eating joint). Often referred to as a wonder food for its high protein content, Dhaba Daal is cooked slowly for hours over a slow burning charcoal fire, giving it a smoky flavour. A favourite of the common man, this daal tastes best when served piping hot with a dollop of butter and raw onions sprinkled with lemon juice as an accompaniment. The bread to go with this dish is the oven baked Indian tandoori roti.

  The rich in taste and a favourite of the Mughal emperors, Daal Makhani is a fusion of Indian and North west frontier cooking styles. A proportionate blend of black gram, Bengal gram and red kidney beans in onion and tomato gravy, cooked on a slow charcoal fire and then perked with exotic spices and garnished with light cream gives this dish a delicate hint of spice and flavour.
